The Dutch Opium Act (Opiumwet) works with two lists of controlled substances. Since 1 December 2008, mushrooms that contain psilocybin have been on List II, which made growing, selling and possessing them illegal.
Truffles are a different part of the same fungus: they grow underground, while the mushroom is the part above ground. The 2008 ban named the mushrooms and left the truffles out. The same Dutch law applies to visitors as to residents, so taking part in a truffle ceremony in the Netherlands is legal for you too. The legal status stops at the border, however. In most other countries truffles are banned, and taking them across a border is illegal, also within the EU.
So the ceremony happens here, and nothing goes home with you. If you have questions about your own situation, for example because of your job or your home country's rules, ask them before you book.
